Backing up all your photos to Google Photos is a good idea, but you decided it was not the right backup solution for you and you uninstalled the Google Photos app. If you uninstalled Google Photos app, then also it won't stop your photos from getting backup into Google's servers. This happens because the photo backup is live in the 'Google Settings' app on your mobile device. You can use the Google Settings app to turn ON or OFF photo backup, even if 'Google Photos' is uninstalled. The Google Settings app controls your photo backup and other key features. To stop photo backup completely, go to "Google Settings" located in your app drawer and select "Google Photos Backup" option. Move the slider to turn OFF "Google Photos Backup".
