To remove any old iCloud backup, you just need to delete the entire iCloud backup on the iOS device. Here's how you can remove it:

  1. On an iOS 8 device, go to Settings > iCloud > Storage, then tap Manage Storage
  2. And if you are using an iOS 7 device, then go to Settings > iCloud > Storage & Backup, then tap Manage Storage.
